1 Minute Blueberry Muffin

Dine In and Dine Out

Ingredients:

  • 1/8 cup of blueberry
  • 1/4 cup of oats
  • 1 egg
  • 1 Sweet n’ Low packet

Directions:

In a coffee mug mix the muffin mixture. Next, place the mug in the microwave for 1 minutes. If you want to make sure the muffin is firm, allow to cook for 1 1/2 minutes. Once the muffin is done take out of the coffee mug and begin eating!

Fat: 6.5g

Protein: 8.8g

Sodium: 70mg

Carbohydrates: 16.2g

Cuisine Around the World: Loco Moco

Aloha kakahiaka!

That’s “good morning” in an island where

Kamehameha dynasty once ruled & Hula dance was found.

Beside famous for its nature & culture, Hawaii is also famous for their food.

They have their signature dish called Loco Moco.

Loco Moco usually consists of white rice,

topped with a hamburger patty, a fried egg, & brown gravy.

Good news for people in Jakarta;

you don’t need to fly faraway to Hawaii just to eat Loco Moco,

you can now have it at Detention Room!

Pita Pesto Pear Pizza

Yummy Pizza Toppings

Necessities:

1 Whole Wheat Pita Shell

Toppings:

Thinly sliced Red Pepper
Thinly sliced Red Onion
Thinly Sliced Pear
Mozzarella
Feta
Pesto
(Chicken optional – pre-cooked diced)

HowTo:

1. Preheat oven to 400ºF
2. Cover pita shell with pesto
3. Next evenly distribute red onion and red pepper over pita
4. Cover pita with a thin layer of mozzarella cheese
4.5. If you choose to use chicken place here
5. Next cover the cheese with the thinly sliced pear
6. Crumple the Feta over the pear
7. Cook for 8 minutes
8. Broil for 3 – 4 minutes or until top looks golden

Full disclosure: I am obsessed with Peruvian food.  Living in a  landlocked state, I hadn’t had much exposure to (good) Peruvian food until I traveled there a few months ago.  Aside from the incredible ancient ruins, overwhelmingly breathtaking mountain views, and warm-hearted people, the food was mind-blowingly good. I haven’t eaten so well since I was in Japan, which means that the food was pretty damn incredible, and none more so than the food at Astrid y Gastón, the flagship restaurant of Peruvian celebrity chef Gastón Acurio.  I first encountered Acurio as the host of Master Chef Peru, so when I saw his restaurant on the list of the world’s 50 best restaurants, I immediately put it on my culinary “must do” list for my travels.  And let me tell you, I am so glad I did.

I used to have a huge cookbook collection. After a major move from Ohio to Georgia and several yard sales I now only have a large cookbook collection. I have had more than one person make the comment about how I wasn’t going to be able to use all of my cookbooks any more since I made the decision to embrace the Low Carb lifestyle. I want people to know that this is simply not true!

Practically any recipe can be easily adapted to meet the requirements of low carb. While I still am trying to keep my carbohydrate count between 20 and 30 grams it does present a bit of a challenge at times, it is not impossible.
